After running in the Georgia heat, I needed a refreshing lunch to fuel me back up. I whipped up a delicious salad with all the fresh produce I bought yesterday. The combination of ingredients couldn’t have been more perfect! Even salad haters would have a hard time saying no to this.
I topped about four cups of salad greens with: 1/2 sliced cucumber, 1 hard boiled egg, 1/4 cup avocado, 2 tbsps. sun dried strawberries, 1/2 fresh pear, 1 tbsp. sea salt cashews, and 1 tbsp. Annie’s organic poppy seed dressing!
Now I’m ready to dive into a cup of coffee.
