One of the best parts of summer is the grill. Grilling vegetables was the only way I’d eat them a while back. I take advantage of it this time of year! Grilling fresh vegetables and lean protein is great for your health, too!
You can choose whatever vegetables, meat, or fruit for your skewers. I chose: shrimp, sweet potato, bell pepper, pineapple, squash, zucchini, and onion. I marinated them in my pineapple mango sauce. I also steamed the sweet potato in the microwave for 3 minutes. If you don’t, you’ll have the hardest time putting them on the skewers!
Oh! and don’t forget to soak the skewers.
The grill was on high and I cooked them for three minutes on each side.
I paired them with a broccoli slaw and grilled asparagus!
