I like to eat early in the afternoon on Friday instead of a huge dinner at night. When I get hungry later tonight, I’ll pop some air popped popcorn and top with almonds and dark chocolate chips. It is going to be a relaxing Friday for me, full of Netflix and comfortable clothes. I will also be doing an update post shortly after.

Enough babbling…here is my salad recipe….

Ingredients:
-1/4 Cup Whole Grain Croutons
-4 Cups Salad Greens
-1/2 Cup Cinnamon Baked Butternut Squash
-1/2 Cup cranberries cut in half & boiled (after boiled, bake with butternut squash)
-1/2 Cup Cottage Cheese (mix with lettuce)
-1/2 Cup Edamame
-3 Egg Whites
-1 Tbsp Toasted Almonds (bake with butternut squash)
