Summer is almost here! The summer air is already ripe and ready here in Georgia. It makes me want to be outside as much as possible. I love having cookouts and picnics this time of year. I have been hard at work coming up with new recipes for the season! I am a true believer of winter foods and summer foods, so now it’s time to make the transition!
Here is the recipe for my fresh tropical chicken skewers. Theses babies would be perfect on top of a garden salad or with grilled corn on the cob!
Let picnic season begin!
-Ingredients:
-1 Cup Fresh Pineapple
-1 Tsp Apple Pie Spice
-1 Tsp Low Sodium Teriyaki Sauce
-1 Cup Fresh Mango
-1 Small Peach
-2 Tbsp Light Brown Sugar
-1 lb Organic Chicken Breast Diced (No Skin, No Bone)
-2 Tbsp Simply Asia Sweet Ginger Garlic Seasoning
-For the tropical sauce.
-In a food processor or blender, blend together: pineapple, Teriyaki, mango, apple pie spice, and peach.
-You can remove the skin of the peach or leave it.
-Mix in brown sugar with a spoon.
-Add tropical sauce to chicken and mix together.
-Add chicken to skewers. (approximately six dices per skewer)
-This recipe makes five skewers depending on the size of the skewer.
-Sprinkle the seasoning evenly over the skewers.
-Bake at 350 degrees for 16-22 minutes. You could also grill these!
