I wonder if Dr. Seuss was referring to my fruit kabobs!? They are fun, they are good, and if you haven’t made them you probably should! It’s a good chance he was.
Yesterday, we had a little party after our workout class. Our instructor brought in veggie subs on wheat and I brought in fruit kabobs! I love to bring healthy options to parties, rather than pigging out on chips and dip. The fruit kabobs are super easy to make. (If you have kids, get them involved) You choose fruit to match your event or special occasion. Last year for the Fourth of July, I made them with strawberries, blueberries and marshmallows to represent the American flag.
Get creative with it!
For my party kabobs, I chose…
Pineapple!
Strawberries!
Cantaloupe!
Red Seedless Grapes!
Watermelon!
After chopping up all the fruit, I added them to a large skewer. To keep the fruit fresh, I squeezed fresh lemon juice over the top.
The sub was delicious! This was a great post workout party full of healthy fuel!
These kabobs would go great with a Greek yogurt fruit dip!
I wonder what these would taste like grilled….
