On the sixth day of Christmas my true love gave to me…Light Deviled Eggs.
I haven’t had deviled eggs since Easter. My aunt, Rosanne makes phenomenal deviled eggs during the holidays! I need to grab her recipe to share with you all soon.
I browsed through the refrigerator to see if I could whip up some, luckily I had most of the ingredients. I also put a healthy twist on the recipe today.
-Hard boil 4 large eggs.
-Rinse and Peel the shells off the eggs.
-Slice peeled eggs in half.
-Separate the yolk and rinse egg white halves.
-In a mixing bowl add: egg yolks, 2 tbsp yellow mustard, 1/2 tsp paprika, dash of pepper, 2 tbsp fat free cream cheese, 1 Tbsp plain fat free Greek yogurt, 1 tsp pickle juice, 1/2 tsp ground nutmeg.
-Mix all added ingredients together.
-After ingredients are combined, mix in 2 tbsp ground flax seed.
-Add tbsp sized drops into egg halves.
-Garnish with: walnuts, paprika and mustard seeds.
-After eggs are prepared, place in the refrigerator for 30 minutes to chill.
-Keep refrigerated until served.

On the sixth day of Christmas my true love gave to me…six geese of laying.
Imagine that. My true love has gifted me with another bird. Why didn’t he keep up the gold trend, filling my stocking with gold necklaces or gold earrings? I’m sure Marilyn Monroe never received birds for Christmas. She had her stocking filled up with a duplex and checks.
I’m going to give my true love one more chance.
Until then, I’ll make these laying geese useful and whip up some deviled eggs!
