Tonight’s dinner looks so Christmas-y with: gold shrimp, onions, green peppers and red peppers! I did’t take a picture of the final product before scarfing it down. Running makes me so hungry. I wrapped: the cooked shrimp, onions and peppers up in iceberg lettuce. Then, I added: guacamole, black beans, salsa, corn, tomatoes and plain Greek yogurt. So delicious! This is such a fast dish to make. Whenever I am craving Mexican food, this is my go-to.
