One of my FAVORITE desserts is tapioca pudding. Tapioca doesn’t contain a lot of health benefits so I wanted to try something different. Lately I’ve been reading a lot about Chia seeds and their health benefits. Chia seeds are : super high in fiber, help with weight loss, reduce cravings, hydrate the body, control blood sugar, high in omega-3 and give the body a full feelings. 2 Tbsp Chia Seeds (Wholefoods)
1 Cup Unsweetened Almond Milk
1/2 Tsp Banana Extract or 1/2 banana mashed.
1/2 Packet Truvia
- Mix all ingredients together, cover and refrigerate for 7 hours.
The consistency was so thick and similar to tapioca pudding. I can’t wait to try this with new flavors. I am adding coconut and unsweetened cocoa powder next!
